An egg product made from whole eggs with added citric acid. Citric acid naturally prevents the green discolouration of prepared egg products that occurs when they are kept hot for an extended period, for example in a bain-marie.
Indoor (barn) eggs are collected from the various poultry farms and transported under optimum sanitary conditions. Whole egg is then prepared by breaking fresh hen's eggs, subjecting them to a pasteurisation process and putting them in the desired packaging. The product is cooled to between 0° and 4°C for storage purposes.
In addition to guaranteeing food safety (no salmonella), the pasteurisation process mainly assures a longer and better shelf life. This product is perfect for any preparations that rely on natural, fresh and full egg flavour.
