Strawberry dessert

Delicious strawberry dessert with vanilla ice cream, meringue, and red fruit

  • Vanilla Ice Cream: 500g milk, 120g Cocovite liquid whole egg, 2.5g salt, 125g sugar, 25g invert sugar, 3 vanilla pods, 250g cream
  • Meringue: 200g water, 800g sugar, 560g Cocovite liquid egg white, 320g sugar
  • Raspberry Coulis: 900g raspberry purée, 100g water, 50g sugar, 8g instant xanthan
  • Decoration: Fresh raspberries, strawberries, blueberries, Jordà red fruit and yogurt crumble, Jordà chocolate decoration ball

Start by making the vanilla ice cream by combining the milk, liquid whole egg, salt, sugar, invert sugar, and the seeds from the vanilla pods. Heat this mixture while stirring to 85°C, then let it cool and strain it. Churn the mixture in an ice cream maker until it forms creamy ice cream. Make the meringue by heating water with sugar to 118°C. Simultaneously, whisk the pasteurized egg whites with additional sugar until stiff peaks form. Slowly add the hot sugar mixture to the whipped egg whites while continuing to mix. Let it cool and pipe small peaks onto a baking tray. Dry the meringues in an oven at 120°C for 2-3 hours and let them cool completely before crumbling them.

Make the raspberry coulis by heating the raspberry purée with water and sugar to 65°C. Add xanthan while stirring continuously and let the mixture cool. Store the coulis in the refrigerator. Melt the white chocolate with cocoa butter for the chocolate decoration balls and mix it with rice crisps, freeze-dried raspberry, and yogurt powder. Pipe the mixture into silicone sphere molds and freeze them.

Assemble the dessert by placing a scoop of vanilla ice cream on a plate. Add fresh raspberries, strawberries, and blueberries. Drizzle with raspberry coulis and garnish with the crumbled meringue, Jordà crumble, and a chocolate decoration ball for a refined finish.

  • Let the meringue cool completely before crumbling it to maintain a crunchy texture.
  • Use a freezer mold for the chocolate balls to ensure they hold their shape when served.
