Lemon cocktail

Refreshing citrus gin fizz with lemon espuma

  • 375g lemon puree (for the gin fizz)
  • 225g sugar syrup (for the gin fizz)
  • 225g gin of choice (for the gin fizz)
  • 200g Cocovite pasteurized liquid egg white (for the espuma)
  • 170g lemon puree (for the espuma)
  • 190g sugar syrup (for the espuma)
  • 100g gin of choice (for the espuma)

Start with the cocktail base by mixing the lemon puree, sugar syrup, and gin in a mixing glass until smooth. Chill this mixture to allow the flavors to blend optimally. Next, prepare the lemon espuma. Combine the pasteurized egg white, lemon puree, sugar syrup, and gin in a bowl, whisking until light and smooth. Pour this mixture into a whipped cream siphon and charge it with two gas cartridges for the perfect texture. Keep the siphon warm in a bain-marie to maintain the espuma’s lightness and consistency. Serve the gin fizz in a glass and top it with a generous layer of warm lemon espuma for a unique flavor experience.

  • Use fresh lemon puree for a more intense and refreshing flavor in both the cocktail and the espuma.
  • Ensure the bain-marie isn’t too hot to prevent the egg white in the espuma from curdling. A temperature of around 60°C is ideal.
