Pancake with orange and dark chocolate cremeux

  • 85g Cocovite pancake mix
  • 1.5 sheets of gelatin
  • 100g orange juice
  • 1 orange
  • 1 egg yolk
  • 15g sugar
  • 50g milk
  • 50g cream
  • 55g dark chocolate

Boil the orange juice with the soaked gelatin. Let it set in the refrigerator until it reaches the desired thickness. Start whisking the egg white and add a little sugar. Pour the egg white into the boiling milk and cream. Cook until it reaches 85 degrees. Add the chocolate and let it set in the refrigerator. Cut the orange “à vif.” Cook your pancake and plate it as shown in the photo.

  • Use an ice bath (a large bowl with ice water) to cool the mixtures more quickly before placing them in the refrigerator. Stir regularly until the mixture begins to thicken, then transfer it to the refrigerator. This can significantly reduce the time needed.
  • Use a sharp knife and start by cutting off the top and bottom of the orange to create a stable base. Follow the curve of the fruit with your knife to completely remove the peel and white pith. Then, carefully cut the segments out between the membranes. Work over a bowl to catch the juice and add it to your orange mixture for extra flavor.
